VEGAN - DEFINITION:
"Veganism denotes a philosophy and way of living which seeks to exclude - as far as is possible and practical - all forms of exploitation of, and cruelty to, animals for food, clothing, or any other purpose; and by extension, promotes the development and use of animal-free alternatives for the benefit of humans, animals, and the environment." ~ The Vegan Society's Memorandum of Association
VEGETARIAN - DEFINITION:
The Vegetarian Society defines a vegetarian as: "Someone who lives on a diet of grains, pulses, nuts, seeds, vegetables and fruits with, or without, the use of dairy products and eggs. A vegetarian does not eat any meat, poultry, game, fish, shellfish* or by-products of slaughter."
Types of Vegetarianism
- Vegan: (See above) Vegans do not consume any animal products or by-products. They also do not consume eggs, dairy. honey or beeswax, gelatin or any other animal by-products. Vegans also do not use animal products such as silk, leather, wool, fur, etc.
- Lacto Vegetarian: Lacto-vegetarians do not eat red or white meat, fish, fowl or eggs. However, they do consume dairy products such as cheese, milk and yogurt
- Ovo Vegetarian: Ovo-vegetarians do not eat red or white meat, fish, fowl or dairy products. However, ovo-vegetarians do consume eggs and egg products
- Lacto-ovo vegetarian: The most popular type of vegetarian a Lacto-ovo vegetarian does not consume red meat, white meat, fish or fowl. However, they do consume dairy products and egg products.
The following are "semi-vegetarian" diets
- Pollotarian: Restricts meat consumption to poultry and fowl only. Pollotarians do not consume red meat or fish and seafood
- Pescatarian: Restrict their meat consumption to fish and seafood only. Pescatarians do not consume red meat, white meat or fowl.
- Flexitarian - A plant-based diet a flexitarian will occasionally eat meat
There have been a few other unofficial terms floating around such as Seagan - described as someone who does not consume meat, poultry, eggs or dairy but does eat fish

Eggs: Many lacto-ovo vegetarians will only eat free-range eggs. This is because of welfare objections to the intensive farming of hens.
Through its Vegetarian Society Approved trade mark, the Vegetarian Society only endorses products containing free-range eggs.
